Is there bbcode for doing a strikethrough of text? And is there a way to turn of the flashing orange 'new post' indicator for posts that you don't plan on looking at?

Let me poke around the admin section to see if there's strikethrough shortcuts.
To clear new posts you don't plan on reading, you can use the "Mark Topics Read" option which is just above "Latest Post" on the upper right and under the list of pages for each section.

Go to "User Control Panel" which is at the top just underneath the welcome banner and the board name. Then click "Profile" in the menu bar on the left. Then click "Edit Signature." Hope that helps!
